Technical
SSL and https, speed on mobile and desktop, responsiveness on real devices, correct titles and h1 for queries, a sitemap and robots, microdata, a set-up 404, redirects from old URLs.
Business and analytics
Forms actually send requests (test them!), Google Analytics and Search Console connected, online payment works, contacts and prices are current, copy is typo-free. A silent form is the most expensive launch mistake.
